Vegan Strawberry Rhubarb Crisp

This turned out soooo yummy, I wanted to share! It's just a basic crisp, but no refined sugar & with some added healthy goodness!

I didn't measure anything, so here's a rough estimate of what I put in. You really can't mess up a crisp!

The inside: 1lb rhubarb + 1 pound strawberries Sauteed in coconut oil until nice & syrupy 2 tablespoons ground flax 2 tablespoons chia seeds

The top: 1 &1/2 cupRolled oats (more if needed) 2 tablespoons ground flax seeds 6 tablespoons water 2 tablespoons chia seeds 1 tablespoon cinnamon 2 tablespoons melted coconut oil 2 tablespoons pure maple syrup (optional)

Mix it all together!

Spread the rhubarb & strawberry mixture out in a baking dish. Spread the oat mixture evenly on top. Bake at 350 degrees for about 20 minutes or until the inside bubbles up a bit!!

This could be used with any fruit mixture & it's a good recipe for kids to help with!
